On my plastic cover, there is about a 3/4" hole for access to the u-joint grease fitting. If yours doesn't have one, a hole saw would quickly solve that. The little plastic "zerk" nipples on the cover are just for a bit of grease to help them spin freely. I mostly ignore mine.
